Forminator form to create posts with post data fields not showing up in posts

Hi I have created a form that posts data to posts. The issue i am having is that the some of the post data fields are seen in the notification emails but not in the posted posts.

I have created custom fields in the post data section and have been able to map them with the forms matching labels and value eg Name and {name-1}

When i go to forminator submissions it shows Postdata +7 other fields

Another question is it possible to set a default category that users cannot modify or see.
